OP make sure the fish sitter TOTALLY understands what equipment she touches and doesn't. Especially if she doesn't have an aquarium herself. Get a timer for the lights if you don't have one.
I myself would have her feed your fish at a minimum once every 3 weeks or more. And as small of portions as possible. Small enough where he eats the whole thing and leaves no leftovers.
Have food pre cut and frozen for her.
Is she going to be doing water changes or gravel vacs?

I just gave my rhom one.
Normally I have as much as possible and I've had success with that but in some cases its taken a very long time.
With this rhom I had a large sum of plants die off leaving the water open for quite a while. Just too lazy to put rocks and driftwood in there. He didn't mind too much.
I just recently put a rock/dw cluster in there for him, he stays out of it unless he's stressed which is why its there (other then looks).
Every fish is different though.
Keep an eye on him though. He might change as time goes on.
