Just to give a real world example, most of my 'big' shark/ray tanks run some trace ammonia (<.05), 0 nitrite and well over 300 nitrate. Once you get a long term established tank, you'll be able to get your nitrates down to 50 or so. I've seen some places run over 1000. Biggest things to worry about are NH3, pH and salinity.
