What about other cichlids ? My local pet store was suggesting a convict, Blue acara but Will it be too much for him ?

If you add a Convict I still suggest adding dither fish and make sure you have plants , driftwood to break line of sight.

I have a fully planted tank with a few caves, I'll get some driftwood ! And dither fish to keep them distracted and somewhere to hide

The best cichlids to keep with firemouths are more firemouths.

I would add 3-4 females to spread the aggression. Firemouth's will just flare up gills most of the time one of the milder CA species imo.
