Could a canister filter alone clean a 75 gallon with one Oscar?
definitely yes, but it not a bad idea to have another filter for redundancy like an aquaclear 110, cheap and effective mechanical filters which is nice 'cause oscars are messy eaters, and awesome fish too!

Would I be able to have any fish in with the O, or would I need a bigger tank for that? If so, how big and what could I have in with it?

A good rule of thumb that I go by is one fish per inch.

No, I wouldn't recommend it. it might work, but it's risky and you may end up with either one dead fish or two miserable ones. Not to mention the bioload. Some JDs are bashful, but they're still territorial, and two territorial fish in a 4 foot tank is a gamble.

What about a 125 gallon? Would that work with the JD, or should I not go with a JD at all, in that case what would you recommend? Or maybe just go with a fish too big for an O to eat? Commentary and suggestions are welcome.
