leaves decompose, in the decomposition process your ammonia levels will spike.
That's up to you. Leaves can be replaced every week. Ammonia is less toxic in lower pH compared to higher pH.

Two words: cork...bark

I did a cork background in a 29 gallon. I boiled the stuff, soaked it for about 2 weeks and then put it in the tank and after about two days, it was easily as dark as those pics. It was so dark it was hard to see fish if they were towards the back of the tank
 
You can make your own concentrated "tea" water by boiling oak leaves amd straining the particulate matter out.
