Well, u just answere your initial question on what pleco to get.
Second step is finding one. Theres not a whole lot around and be prepare to pay top dollar. If u like the looks of the titanic, maybe consider l24, l600, l25 or l114.
Should be fine in 75 gal for a while, they grow slow.

How about a Green Phantom Pleco. They can grow to about 7 or 8 inches. Here's mine at about 2 inches:
