Thoughts on stocking?

When I started at age 8 in 1958, color television hadn't become a thing yet.
And I agree about as expensive or less it is, by the time you enter college, you could spend 4 years tuition on fish stuff, and in an apartment, or dorm, you may not be allowed any tank larger than a 50.gal.
You may want to start out a little less dramatic to get your feet wet, and gain experience instead of ordering some of the species you crave at the moment.
I like the idea of a crayfish in a 29 .
Honestly after I finish the 150g(no clue when), I want to set up a fish room and keep as many catfish as I can get although I did make a tank size limit of 75g max with one 100g as an exception for maybe a lungfish. Basically I’m really ambitious

Got my filter and airstone working in my 29g!!!

Crayfish are awesome, and and startvery interesting, i had one years ago and want my son to get one soon. You can start with local sources instead of ordering online and maybe start with the angels pictus and tetras, or get a plain bristle nose, and add to your tank over time.

would a sump or 2 canister filters be better for the 150g?

Either would work and that's a pretty strong debate on here at times lol. Personal preference in my opinion. I like my canister but if i didn't have to convince my wife a sump would never flood them I'd probably try one out. Easier access for maintenance on an open system.

Just a random question about pictus, do they like strong flow? Because I’ve heard that they do and angels don’t

I think they're pretty flexible, I've only had them for a few months but they don't swim in the current or anything, certainly are strong and fast enough to handle current if you have it though. They just hang out in a semi covered area wagging back and forth like puppies, then at feeding time or when they're excited they cruse the whole tank floor sweeping up food and debris
