Wow. I'm not sure what I'm doing right (wrong) then. I got my Oscar at about 2" in July. He's now almost 13". I (over)feed once per day with Hikari Gold pellets, some purchased crickets about once a week, and some occasional leafy stuff thrown in (he went nuts night before last for some zucchini. He's bulked out to the point where he's almost fat. Currently, he's waiting on me to finish my 125g tank and has been living in an 55g with an 8" Severum this whole time who constantly picks on him. I do 70% water changes about once a week.

The severum is probably territorial because they are both big fish and they are in such a small tank I don't think you'll have that problem with them once you get them in the 125 good luck

my oscar grew up at an average rate of 1.5 inches/month until they reach 10 inches long in 10 months, then they grew up slowly but becomes thicker and sturdier.
