Whenever I walk by they are all at the top because they are hungry, other than that none really go up to the top much. I have high rock coverage too.
I think it must depend on the individual stock then because mine spend plenty of time at the top. I do have rocks stacked up to the surface and also have some floating logs that they like to play in.
If your tank is big enough a school of p. acei works...they are somewhat open water.

I currently have a 55 gallon tall with the following fish
3x kenyi
2x aurtus
3x yellow labs
Just wanted to know if there are any other fish I can add. ex. gar or arowana or some kind of catfish.

Gar's or arowana's won't work because they get too big. Some catfish could work (ex. Synodontis), but these are bottom dwellers anyway.
you could try larger aulonocara if you had smaller/more mellow mbuna but I don't know if the mix will work out long term with something as mean as auratus in a 55
You can try putting in a powerhead. Often times they will swim in the current at the top of the tank. I did it to mine and they love it. Some swim at the top into it and some stay in the middle of the tank and some swim in the opposite direction at the bottom (Current bounces off the wall). I've seen video's of Mbuna enjoying themselves.
