Do they need a lot of hiding spaces? Just wondering if I should redo my tank set up before I buy him

no they do not need a lot of hiding spaces, a few floating plants will be good

IME tropical, Cuban, and alligator gars are exponentially more aggressive than their Florida/SN/LN cousins. Be careful with future stock. They seem to have a particular disdain for shiny silver fish.
