So if she doesn't develop any graying she could still be an albino?

I may have been mistaken. I thought if there were any markings on an albino Oscar that they would be either cream or self-colored.

There is no difference, Lemon Oscar's get the name due to having Yellow marking instead of the normal orange. It's just a common name given to them.
