Actually when it comes to "fight or flight" gars are all flight. I had a Florida Gar for over 10 years and it was a very passive fish, easy picked on by other fish. But because of it's size most other fish avoided it. If the creature isn't big enough to eat, my gar basically ignored it. I can't speak for gator gars, they're a little more aggressive than Lepisosteus. I could however see a gar accidentally biting a turtle during feeding time. My gar loved pellets and so do my turtles and they just snap at anything floating on the surface.
