I don't know anything about [FONT=arial,sans-serif][SIZE=-1]Uromastyx, although I do know that they can vary between a foot long to about 3 or 4 feet depending on the species. Quite frankly, I don't know a lot of [/SIZE][/FONT]herbivore[FONT=arial,sans-serif][SIZE=-1] lizards under 4 feet.

It is not really fair to say gecko size since that is vague, since Tokay can reach just a bit over 12" and the biggest guys recorded can reach up to 15" or 16".

Uros will reach beyond 12 inches so will desert iggies. All the strictly herbivorous lizards reach and exceed 12 inches very easily. There are crested geckos that eat baby food and crested gecko diet, but they need to be supplemented with cricks too. My suggestion would be a uro for the reason that they are calm animals and they would do well in an enclosure the size of a 75 gallon for one adult. Desert iggies are way to high sprung and dont do well with constant handling.
 
lets not forget some of the rach species that can be the size of your forearm. Some geckos get bigger than bearded dragons. Speaking of bearded dragons there is a breeder on the northeast coast who is feeding their bd's strictly mazuri diet and having success. I dont agree with it, but that may be another option for you.
 
I highly recommend a mali uromastyx or an ornate uromastyx. My 8 - 10 year old male mali is around 16 inches but he's hefty lol. About 650 grams. It takes some time for them to grow this size. They are very personable lizards too and eat mainly greens, legumes and seeds. Check deerfernfarms.com if you decide to get one. They usually have high quality captive bred babies and theres tons of info on the site. Just stay away from egyptian uros as they grow to nearly 3 feet in length and require at least a 12 x 4 foot enclosure.
One more thing, don't get a uro unless you can provide a large habitat eventually. While not the largest of lizards they are very active when young. Even at ten years old my guy still gets around. I would recommend at least 48 x 24 inch enclosure for a single adult. I keep my guy in a 60 x 30.
