how can shedding cause that?

It hasnt anything to do with shedding Only in fingers or the tip of the tail we can relate swelling with unshed skin.

another thing i've just noticed is she is a little swollen underneath her chin on one side, isnt that a symptom of MBD? just like swollen limbs and lethargy? if it is she shows all 3 of these....

Yes it is, but once more it can also be infections. You really need to get your lizard seen by a proper vet. Only he can see whats going on.

looks like an infection to me, you need to get it to a vet before it spreads..
