Some people have a variety of sensitivities to the different substances in water, and 99/100 it is nothing... but there are also a lot of nasties lurking in the water. Look in to mycobacterium marinum, it will blow you away what some people have dealt with simply by coming in contact with aquarium water.
My hands are in the tank almost every day, replanting or tweaking the aquascape, so I use gloves. If you have sensitivities, it might be wise to invest in them. Most aquarium retailers stock them and they run $5-$15 a pair. A lot of people that keep dangerous (read: poisonous) fish wear them, so do the paranoid hypochondriacs like myself.
