I have heard rumors that water that goes through the water heater picks up some minerals which could be bad for your fish.

Anything in the water heater is identical to what is already in your water. It is safe.

The inside of the heater starts life as a glass lined tank. Over its life, it gathers sediment that settles out from the water. The hot water isn't any different than your cold water. If anything, it will have less minerals from the settling that is happening in the tank.
