water evaporation when cycling a new tank

When you pick up the tank, get some filter sludge. Take a bucket or a plastic bowl with lid so you can seed your filter. Anyone would be happy to do this, and they may even feel like a grandparent to your tanks.

I'll be picking up the whole setup. 20gal Long, filter, heater, hood, light, substrate, live plants, etc... Correct me if I'm wrong, but all I have to do is empty most of the water to drive and refill when I get back home :)

Don't lift the tank with very much water in it.

As long as the filter is kept wet & not left for too long or too hot. If you can get a couple of 5g buckets with lids (paint store of walmart paint dept) to bring some of the water home and then top off with aged / dechlorinated water. Check the chemistry and go from there.

the AC50 that's on it right now has 2 sponges in it. He's going to put some tank water in a zip lock bag and keep the sponges in there. I'm probably going to come up with 2 or 3 empty water gallon containers to bring home some of the water. :)
