Here, I cooked another steak for the guys who like it "well" done.

dont need to be well done but not that red.I tryed a rare filet tonight and it was a bit to tough.
 
That must have been a bad cut. I've never had a tough cut unless it was well to medium well. Oh well...to each their own:D

I've heard un-done steak is way better than well done/fully cooked but have brought myself to try it. And there's a fine line between rare and raw, and at some resteraunts they get medium-well and raw confused.

I see you got the charcoal to get burning. Hahaha... looking good. The only bad part about rare steaks is they make me fart more. But that is something I can handle (I don't know about you guys and girls though).

Who ever mentioned jerky, I can make some of the bombest jerky you ever had with the same steaks rally just cooked up. Next time I'm down there, I'll hook rally up with a bunch for you Indianapolis folk. And you are right its rare or its jerky.

i dont have any fancy pics but here goes

take a nice fine cut i like to ribeyes for this lol.

get some

Dr. pepper
salt
pepper
cavenders meat rub
worchteshier.

and the fuel for the fire is just as important too.

regular briquettes
aged mesquite chips (i get mine free)
and pecans still in the shell.

but they have to be layered like this
coals then pecans then mesquites chips.

mesquite burn hot so it is a very quick cook.
med rare 2-3 minutes each side
med well 3-4.5 minutes each side.
well done any thing over 5 minutes

now the trick is to rub these down and put them in the fridge while your coals get ready.

for a twist place steaks uder stuffed jalapenos while they cook.
