You have practically zero biological filtration in that tank as evidenced by you getting a positive ammonia reading. No established tank should ever have any ammonia whatsoever regardless of water changes.
 
I have a few common plecos, and mine are always super dark, and they only lighten up when they are stressed. I noticed in your pics of him when he was alive that he is extremely pale in color.. I would suspect stress..

It's also possible that maybe the fish were picking at him at night causing the stress?
