what can I breed in a 30 gal?

Bristle nose plecos would be a good choice. All you is a pair and a flower pot turned upside down with a hole and it and feed the fish and they really do the rest. They did for me anyways.
 
here's a short list of cichlids you could breed in a 30 gallon:

convicts or any other cryptoheros (sajica, spilurum, cutteri, nanoluteus, myrnae, septemfasciatus)
firemouths or any other Thorichthys (aureum, maculipinnis, callolepis, helleri, mixteco blue, green or gold, socolofi, pasionis, affinis)
kribs
jewels
keyholes
angels
festivum
checkerboard cichlids
any appistogramma
blue, gold or german rams
gymnogeophagus balzanii

Platys and swordtails are easy to breed but are not a challenge to an experinced aquarist. Plecos definitely represent a challenge!
 
Firemouths would be alright.
 
Kribs , apisto's {all the way I have some to get rid of } Badis badis, Laetacara dorsigera/ curviceps, nigerian red taeniatus, nannacara anomala all of those would work plus you could also have killis as they are top water fish.
 
dwarf gouramis? (I know they're not cichlids, but hey...bubble nest)
 
If you're looking for cichlids, my vote is Kribensis. Small, very pretty fish, non-aggressive, easy sexual dimorphism, easy water parameters, good parents. Fry are on the small side, but easy to raise. 30 gal would be plenty of space.

As viciousconvict suggests, the anabantids are also a lot of fun. Blue gouramis are among the most prolific fish around, and the dwarfs (although I haven't raised them) are so nice.

Pearl gouramis are gorgeous too....my favorite gourami actually. :D
