What type of catfish would be best for my 125 gallon tank with a severum, geos, a uaru and a gar?

Would you want to see them all the time?
If you’re ok with not seeing them all the time then raphael catfish are a great choice. If you do then hoplo catfish are a lovely choice as well.

What type of gar?

Do you have hard water (GH reading) or soft water?

I would stay with catfish that get no larger than 12" total length (not including whiskers). Pimelodus blochii, Pimelodus albofasciatus, Pimelodus ornatus, Harlequin Lancer catfish, Pseudopimelodus bufonis, Synodontis eruptus, Synodontis multipunctatus come to mind.

I have a spotted gar and honestly I have no clue what the hardness of the water is

I'll revert to type and give my usual answer, bolt catfish. Interesting, active, can hold its own with cichlid etc. Won't always be hidden, won't get too big for that size tank, different but not ultra expensive or tank buster.
