To answer question, some salt water species are probably quickest.

I know mahi mahi can reach 60lbs in 2 years and have clocked growth rates at 1 inch per week, there may be even more rapid growers.

I kinda suspected arapaima would grow incredibly fast seeing how they end up so big. Never kept one, don't currently have an extra olympic size pool to house one!
