im thinking its going to be pretty quiet in there with mainly catfish, how about getting a interesting cichlid but something that isnt to aggressive like a red spotted severum ?

Most definitely not on all three counts. An alligator gar has the potential to literally get longer than your tank. Dovii are very large and very aggressive cichlids. A pair would need something like 200 gallons.
