try algae wafers and spirinula based pellets. this will help with some colouration. also a good quality food such as cichlid gold as the staple, i use this as you get different sizes of pellets so i never have to change type as the fish outgrows one size. i have heard of people giving fruit to oscars but i am unsure if it will be ok for your smaller cichlids. shelled peas are good as well.
i am experimenting with earthworm pellets at the moment, seems to be going down a treat.
For veggie foods, I give algae wafers. I give it to fish like my texas, and convict love them. I don't give veggie based foods to my oscar, salvini, or firemouth. Those fish need a meatier diet, but they get it in the pellets I feed them.

my midas does get his high protein predator diet (cichlid gold, bloodworm etc), i just add in some veggies to keep his system in good working order. all the preds ive had have had a veggie element to their diet, by accident at first when they stole the plecs wafers. then i started as a part of a healthy and varied diet.
