I like it better with the plants. It brings out the colors of the discus and denison barbs better.
I think you'd be safe with Anubias. I kept a lanceolata in a plastic tub for over a month and it did fine. There are a lot of species of Anubias out there too, almost an endless amount of textures.
 
I like it with the plants. I actually had to read like 15 posts to realize that the plants in the picture were fake. I thought those were pictures of your tank before you lost your real plants. It looks great.
 
What i seen that looks good u can try. Tie x-mas moss to the tips of your branches of wood. Its not very hard to grow, and it really brings out that kind of wood. Just try it. Nothing to lose rite? Nice tanks, sorry bout that outage man thats a disaster.
 
Thanks for all the tips/comments/suggestions every one! As it turns out, a very nice member on another forum saw what happened to my tank and is giving me a lot of blyxa japonica for free, he was gonna tear the tank down anyways and would have just trashed the plants. So, in a few days I'll have some real plants back again :)

Haha beautiful tank!! ^ But I wont be going heavily planted. The hardscape will stay in place, and I'll be adding just a few plants :)
