What should I breed?

Ive bred many fish before and I'm looking for a new project. I've got a 55, 20, 10 and a 5 gal that I can use for breeding. I'm wonder which would be the funnest or most interesting to do. I'm not so worried about the market of them. I'm trying to choose between these.

Bettas
Jack dempseys
Or your own suggestions.

salvini! great lil cichlid! easy to breed as well.

Im pretty sure you need a bigger tank for jacks to breed then a 55 gallon something like a 75 would probably work. Breeding bettas or killifish would be cool

I won't do the jacks any more. But now I'm thinking no fish that really get over 4-5". What about gouramis?
