The most common predator of young dovii in nature are birds.
Young dovii instinctually hide under logs, overhanging, and floating plants.
Taking out all cover will only traumatize it even further.
Floating plants, or logs, and caves will help, you may not see out 100% of the time, but that is the nature of the beast.
When I had dovii the were out all the time, but that's because there were plenty of places to hide if they became startled.

I kept them with other similar sized cichlids, but a 55 in not large enough to add more. I used a 150 gal as a grow out tank, and it quickly became way too small.
 
I agree with everything said so far.
IME most cichlids are shyer at a smaller size and smaller tank.
I never grow fish out in a smaller tank in hopes I'll get a bigger one. I find they grow faster and are much healthier (disease and other issues). The only time I use a grow out tank is if the fish is too small and at risk of being killed or eaten by the other fish. Of course this is not 100% how everyone should do it, it just cuts out the constant tank moving, cycling etc..
