What should I stock my new tank with??

I would personally go the piranha route. Probably a shoal of caribe would be the best for that tank IMO.

It could possibly be used as a grow out tank for some of the smaller rays. with that foot print and filtration you could probably keep a retic almost for life in that thing. Clown loaches would be cool too.
 
Lots of polys would be really cool. A huge school of clown loaches would rock though.

Go with polys in a tank in with those dimensions.
You won't regret going with polys and having them pile in one corner of the tank.
