Convict are easy.. Fancy Guppies, mollies, swordfish, you can breed a lot in a 20 gallon.. Mostly small tropical fish will be your best bit or try some of smaller african chiclid..
I personally breed Guppies, Sword Tails, and Mollies. It's possible in a 20 long. I do mine in 2 10 gal. It's easy not really a challenge. If you want a challenge don't go for the livebearers.
There are lots of fish to breed in a 20 gallon, I used to breed Daffodil Brichardi in a 20 long. I always got good trade in value at LFS with the Brichardi. They were great with there fry. Tthere was usually 3-4 sets of fry from little dots to 3/4" fish...after that the parents would kick out the larger fish.
A livebearer which looks really cool and interesting is any sort of halfbeak (dermogenys are easiest to breed and care for), however they abort very easily if exposed to stress so they make a better challenge than most livebearers.
i did plattys (swordtails) for a while... they was pretty neat but then it got old...
i just set up a 30g for rams (german blue and german gold)... so far half of them managed to kill off the other half... not a good start.. but not a bad one either... i need to get some more now that i know how to properly sex them (my bad should have researched a lil more)
honestly if you want something thats extremely easy to breed and is entertaining to watch, try convicts. Although you will have some trouble unloading fry. Its actually pretty interesting watching them protect their eggs so well and once they've hatched move them around the tank to where they think the babies will be safe.
