What to do with 20g and 75g tank

If suggest cherry red shrimp for a first timer. Easy enough to keep, breed, and care for. Also cheaply acquired unlike some of the other shrimps.
 
If it were my 75 gallon I'd have to look into doing 3 or 4 upper jaw bichirs like Senegals, delhezi, polli, and Palmas. Then look into some milder cichlids to fill in the top like a couple blue acaras, rainbow cichlids, or something similar
 
As a beginner start with neo caridina shrimps. They are easy to keep. You can google about shrimp care and there are many sites for that.

Cherry shrimps are good. They have grades like some are superior and some are average. Bloody mary shrimp is very dark red and looks stunning. Also neon blues look very cool but do not add different colors in one tank or you will have colourless shrimp frys so decide what kind of neo caridinas yoi want to keep. Red, blue, orange, chocolate and then buy a lot from a particular color.

There are many shrmip food in market. Glasgarten make premium shrimp food. Many many companies out there. You don't feed shrimps daily. You feed them like every two to three days. But in a new tank you may need some product to form bio film so they can graze on that. Product like Bacter ae is wonderful.

Edit: About the filter, there are protection covers readily available in all stores. Its a sponge which covers the water intake so your shrimps won't accidentally being sucked to filter. You can use any filtration method but you just need to make the water intake shrimp protected. You need to clean that spnge often because it can clogg very quickly.
