What to do with pumpkins?

read my holiday recipes post & let somebody use them for christmas pies.
 
I might have to try a recipe myself as I haven't gotten any good pie yet this holiday season and it is the main food item that I look forward to.
 
I am embarrassed that I know this....But the pumpkins you use for Halloween and Thanksgiving decorations, are not the kind you want to eat.
