What type of sharks can fit in at 180-220?

No shark species will be able to live in a 180g long-term...they like LOTS of room to swim and get much bigger than 2 foot...

& the moray eels you're interested in will eventually get over 3 foot and at that size, they won't be very comfortable and will need a larger tank...you gotta take into consideration how much of your tanks volume is consumed by the rocks and what not. The rest of your stock sounds great though.

Actually the best sharks for a 180-220 gallon tank for life - would be one of smaller cool water catsharks - like the Izu or Cloudy Catsharks. They only grow to about 16-20 inches in length. And they could even breed in a 220 gallon.

But these species are difficult to find.
 
Not really that big of a jump in footprint is between a standard 180 gallon and a 225 gallon.

A standard 180 gallon is basically 6ft long x 2ft wide - i.e. a footprint of 12 sq.ft.
A 225 gallon tank is basically 6 ft long x 2.5ft wide - i.e. a footprint of 15 sq.ft.
 
Triggers and Puffers as well as large angels pick at benthic animals and while they obviously don't prey on sharks have the capability of doing damage to any benthic shark or other fish for that matter especially if they are adapted to blend in with the substrate. They may look like part of the substrate.
