Awesome looking setup and I love those dimensions. I personally would go with discus and like 500 cardinal tetras or rummynose. Minimum tank temps would be 82 °F or 27.78 °C. So it does limit the kind of plants you can have but anubias, java ferns, vals, micro swords and lotus work great. So peaceful and zen. 
The fish can be pretty high maintenance and this is MFK so I'd probably just go with some bass, South or North American.
