A 13" fish in a 75 gal I don't go by I feel like that's way too small of a tank

That's exactly why you should upgrade before then. Meant to say *before instead of by. I am by no means advocating someone buying a 13" cichla and confining them in a 75 gallon. But that cichla could definitely grow to 12-13" in a 48" x 18" footprint and by that time they should have an upgrade lined up.
 
I started looking at a tank from glasscages.com to get an idea of size and price and I'm thinking ill have a 240ish 96x24 roughly with in the time frame outlined

Most species of cichla can grow to 24" or larger. I used to have a 240 with 96x24 footprint and was super unhappy with the width, have since upgraded to a 360 96x36. If you are tryimg to stick in the 240 gallon range, get 225 72x30 footprint.

I think your Iowa Pet store rec. those from an Illinois Wholesaler. Im pretty sure those are Bahia Kelberi. There main diet was HBH Soft Krill pellets small size available at Kens Fish. Good luck
 
The only place he knew that they came from was “his guy” in des moines that he usually only get plecos and Africans from. I have tried to get more info but he don't want to seem to talk much about him
