When do Festae/Mayan actually go red?!

They won't stay ugly if you provide the right conditions, but I believe that's the way it is with any fish.
And just in case you haven't seen it, below is video I took of uropthalmus in a Cenote Azul in Mexico. I think they look fabulous, especially when hit with just the right sunlight.

I understand the disappointment with ordering a "red terror" and getting a Mayan. Segrest Farms was calling their Mayans as red terrors for years until they started carrying festaes.

I grew mine to 9" then gave it to a store. Also caught one locally and gave it to a store. People catch and eat them around here so I don't really feel bad about using them for food. When you catch them here you're just supposed to throw them up on the bank. It is illegal to put them back.

For me, if it's sold in the aquarium trade and I'm not gonna eat it then I will bring it to a store. The tilapia are another story - I have "removed" thousands from the local state park in a day. They wave my entrance fee for it!

I recommend bringing it to a store, but if you are dead-set on feeding the fish to your dog I encourage you to euthanize it humanely. Considering it's for consumption that means no chemicals. A blow to the head is considered the most humane method for food fish. Freezing them is no longer considered a humane practice.

I wouldn't recommend eating a fish kept in an aquarium yourself. They accumulate musty and earthy off-flavors. Also, if you are gonna feed it to your dog you should be certain that it has never been medicated. Most medications are not food safe with any amount of withdrawal time.
 
If you "don't" order by scientific names, your chance of getting something other than you want is very probable. Common names are notoriously erroneous, and change with location, region, and country.
The name red terror has been used for uropthalmus for many years (I had uropthalmus in the 80s, they were then called "red terrors", and may have even preceded having it used for the cichlid festae.
If you want festae, you must specify festae. You may still get something else (especially in a LFS) but not as likely if you order from a reputable "cichlid"dealer.
I believe the OP has both, so I don't think that is the problem.
Most cichlids are quite changeable, and many times the photos used in magazines and books, are taken under optimum conditions, lighting is perfect, and the fish is at peak health, and may also be spawning colors, which are temporary.
When put in a community setting, with average filtration, and an average water change schedule, a cichlid will not look like one of the outstanding photos often seen.
