Where to get decently large pieces of wood/ trunks

I gotta dumb question, but how is hardwood identified? Is it as simple as being hard or soft?
Hardwood trees have leaves they drop yearly.
Softwood are the trees that have needles for "leaves"

We can't use softwood due to it's natural "antifreeze" that can get to poisonous levels in a closed tank environment.

How about apple trees or other fruit trees? They are rock solid but I’ve heard to avoid any fruit trees…is that true?

Fruit trees are safe. I have apple in a couple of my tanks.
