This is correct. Nitrite is lethal. and truth be told you may lose a fish to stress. BUt that is better then loseing the whole tank to nitrite poisoning. I would not change what your doing. Make sure your angels are getting small amounts of food a few times a day to keep the water quality as best you can without polluting the water. Juvinile Angels are very sensitive to water quality and stress.
I'm not sure if it's been mentioned yet either.. but keep your lights off to help minimize stress and when doing your water changes be careful to spook the fish as little as possible. IE don't just dump a bucket of water in the tank.. slowly pour it in ect. May seem like stupid little things but these add up over-all.
And be careful with the salt amounts. make sure you are adding only what you are takeing out.

Nitrites are only slightly less toxic than ammonia, and need to be kept as low as possible. Further, as long as you aren't doing water changes immediately after dosing Stability, the bacteria have plenty of time to adhere to surfaces and begin replicating.
As mentioned before, your tank is close to cycled as it is, meaning you have a colony of bacteria that has already began to be established, and doing water changes will not effect this.

The poop issue could be a number of things. Most severe, a parasite. Less severe, simple constipation. Daphnia and peas can help with the latter. I'd treat it as if it were constipation first. If they show no signs if improvement any anti parasite food might be worth a shot-- usually containing praziquantel.

If I turn off my lights will my plants be heavily affected? Also now my white angelfish is showing red by his swimming fins
