U should have def been doing a larger water change each week. 10% is not enough.:grinno:
What kind of filtration did u have on the 75g? It does sound like u were overstocked too.

Tzeli is right. My mate who's had fish for over 20 years, has had sudden death in 2-3 days in well established tanks on 2 occasions.as fish got bigger over many 4 to 6 years,the filters were not up graded. Remember as fish get older, = greater bioload. Its just a case of breaching tha spiking point of ammonia vs the capacity of your filtration vs the growth rate of fish.

really sorry to hear of this experience though. :(
 
Any time you find ammonia you should do a 50% or larger water change. Even if you changed it the day before. You were changing about 7 gallons of water a week. And you should have been changing at least 25. I would bet that your nitrates were sky high.
