Is it possible that not a matter of water quality , it is an infectious disease.You can also add baking soda (sodium bicarbonate) to the water with every water change. and it should bring alkalinity and pH up.
Start gradually with a little at a time and bring the pH up to almost 8.

But crustaceans such as crawfish need calcium for their shell to remain viable, and develop correctly, and the water parameters the OP first gave, indicate, (like low 5-6 reading of pH) a low level of calcium.
