i think not the white background but black , and for gravel as far as black gravel or sand i luv it for salt water or ray tanks but i like whats most natural to the environment which u may want to check out a sm. diameter walnut gravel

Yes you can paint the back and a flat black is what I used. Make sure you keep your old background if you have one so you can place it over the paint so the filters or whatever you have hanging on the tank doesn't scratch the paint. Clean the glass real well before you paint it. Don't forget safety first, use gloves and ventilate where you paint.
