Will redbreasted sunfish eat Amano shrimp

Yes they will be eaten lol sun fish LOVE small shrimps and crayfish
 
Are you adding Amano shrimp for aethetics or for tank cleaning purposes? If you want to add a crustacean for aesthetics, stick to a larger-sized crayfish. As others have previously mentioned, sunfish will find them and eat them.

Cleaning on what? Be specific. Algae problems or what?

Personally I won't house any shrimp or crayfish (regardless of sizes) with large-mouth sunfish (green, redbreast, warmouth, rock bass) as they are fully capable to eat an adult crayfish.
 
ALOT of algae.....happens when you have 4 watts per gallon, I'm guessing a snail would do the job? If yes, what kind?
 
Would i be able to house snails in that tank?

yup. in fact if you search the web you can find the results of a study to find out if the reason the bluegill in one pond had better developed jaw muscles was because they crunched snails in that pond whereas the second wimpy bluegills had no snails.
mine don't crunch them yet, but they do pull them out of their shells. they haven't eradicated them yet. the pond snails manage to keep breeding ahead of the eating, but I'm down to 2 of 10 mystery snails with no signs of young from 5 batches of eggs.
 
Redbreast sunfish included snails as part of their diet as most sunfish/rock bass species do. What color of algae? Maybe you should limit your lighting hours.
