Isn't a spotted and Florida gar the same thing just sold under different names
no, they are two different species that look pretty much the same. While Florida gar is sold in pretty much all LFS and online site that sell gar, you pretty much don't see spotted gar for sale at all even though they list the fish as spotted.

So what would be the difference I've seen people selling short Florida gars and long nose Florida gars would the short nosed age be a spotted gar or how can you tell difference

the short Florida gar would be Florida gar and the other is most likely be long nose gar that caught in Florida. There is not much different to tell and I only know two people who can tell by looking(Which Polypterus being one of them), other than that you have to have place of origin (AKA the place they caught the fish that is within spotted gar wild range or Florida wild range) or a DNA test.
