Test results look good I'd have rather seen you add nitrates @ 20ppm to insure that the aerobic bacteria is growing so add and keep an eye on ammonia and nitrite

I agree. You should have some nitrate. Its strange that you don't. I would add a fish so you get some bio load in the tank and keep the bacteria happy. Otherwise looks good

I would stay away from a damsel unless you wanted to keep one. They are pretty fast and hard to catch with all your rock in the tank. I don't have experience with eels so I don't know if you should add one right away

Eels are a huge amount of bioload, or so I was told. I'd start with something smaller so you don't crash your tank.

I check my water parameters every 12 hours right now. I just put a 32" Tessellata Moray in my tank.
