So I decided to give me 300 gallon to my tortoise and maybe get a second female, I'm going to turn my 120 into an oscar tank. My question is. If I buy two oscars today grow them up together. When they are mature and not a pair will they kill or fight each other? I only plan on having those two in the tank maybe a pleco but how would the oscars do?

Could kill each other, could pair up, could live together fine, don't think there is any way to know the outcome. Try it, just be ready to separate them if it all goes wrong.
Oscar are a pretty social fish. foot print does mater, whats dem on tank? as for killing each other, Oscars are not killers, one may die from being bullied do to stress and lack of eating but they are not kill you in the night fish. if its a 6ft tank I think will turn out fine, will there be dom one yup, always, but rarely is this a issue to worry about with Oscars.
4 feet x 23 inches. I don't want to buy 10 and hope for a pair then get rid of the other 8 I would rather buy two and keep two I never kept oscars alone in a tank together always had other play mates
