In the comics Dale was bitten, feeling down he wandered off. The Cannibals knocked him out. When he woke up. they cut off one of his legs(he lost his other leg at or around the time of the prison(yes like Hershal). Dale laughed that they were eating him even though he was infected.

Anything I said about the show is my guessing. I'm trying to compare it to the comics. To be honest, I could be 100% wrong. The only true statement was that he was crying outside the church.
