That video just blows my mind. Almost all of the tanks that were shown in that video were crystal clear. The bag water was too though...unless they're somehow going through and refreshing the water in the bags or moving the fish from bag to bag, I'm not sure how they don't get filled with fish waste and dead fish. Come to think of it, I didn't notice any bags with dead fish at all.
 
Maybe they dont feed them so they done make waste, and blast oxygen into the water periodicly. Just like shipping, a fish can survive in a bag with pure oxygen for probably atleast 3 days.

The shop 25 sec into the video is an amazing shop... the guy who owns it has actually won a lot of ADA awards for his tanks in the past, including a few grand prizes... very friendly and helpful guy...

The turnover rate for fish in fish street is incredibly fast... so fish rarely stay in the bags for longer than 24 hours at most... and normally the shops bag up selected fish each morning and hook them up outside, and on occasion some shops even sell bagged fish cheaper than if you pick out your own fish inside their store tanks...

But naturally you also do find dead fish at times in those bags, especially when they put too many in one bag causing what i can only guess is an ammonia spike, or when the weather is too hot / cold, and the fish can't stand the higher / lower temperatures outside...
