Ho-Kay! Recipes made Epic-er by mahself!:
Chocolate Macaroon Bars (Courtesy Nestle):
1 box (18.25-oz) chocolate cake mix
1/3 cup butter or margarine, softened
2 eggs; divided
1 can (14-oz) sweetened condensed milk
1 teaspoon vanilla
12 oz chocolate chips
1-1/3 cup flaked coconut, divided
3/4 cup chopped nuts
Mix cake mix, butter and 1 egg until crumbly. Press onto bottom of greased 13×9 pan. Combine condensed milk, remaining egg & vanilla; stir in chips,1 cup coconut & nuts. Spread over mixture in baking pan. Sprinkle with remaining coconut. Bake at 350F for 30-40 minutes or until golden brown (center will set when cooled). Cool completely & cut into bars.
My changes:
I don't do nuts, chuck em. Use 1 c butterscotch chips and 1 c choc chips. At Least double the coconut, I usually use most of a 14 oz bag. When its fully assembled, drizzle ice cream caramel over the top. Bake as instructed, open the door for 5 secs when timer goes off, shut the door, turn off oven and let cool. Cut and enjoy!
Triple chocloate brownies (Courtesy TOH):
Ingredients
- 4 ounces unsweetened chocolate, chopped
- 3/4 cup butter, cubed
- 4 eggs
- 2 cups sugar
- 1-1/2 cups all-purpose flour
- 1/2 cup baking cocoa
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups (12 ounces) semisweet chocolate chips, divided
- 2 teaspoons shortening
Directions
- In a microwave melt chocolate and butter; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in chocolate mixture. Combine the flour, cocoa, baking powder and salt; gradually add to chocolate mixture and mix well. Stir in 1-1/2 cups chocolate chips.
- Cover and refrigerate for 2 hours or until easy to handle.
- Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 7-9 minutes or until edges are set and tops are slightly cracked. Cool for 2 minutes before removing from pans to wire racks to cool completely.
- In a microwave, melt remaining chips and shortening; stir until smooth. Drizzle over cookies. Let stand for 30 minutes or until chocolate is set. Store in an airtight container. Yield: 6 dozen.
My changes:
Scrap the cookie idea, its a mess. We either bake as brownies in a 13x9 pan at 350 for 30ish mins. (they are really rich!) Lately I've been baking them in a mini muffin pan with a mini rolo it each one for the perscribed time, +/- a couple mins. Yum! Oh, and use mini choc chips. They just work better. I also use a double boiler, not the nuker.
