Oops gluten balls. Flour dough and wash the starch away...then fried until the gluten puff up. They have those in the Chinese markets.

What's in the pork? Ground pork, one egg, chopped ginger, garlic, chinese rice cooking wine, salt and pepper, a couple leaf worth of finely chopped napa cabbage.
