I use it as a stir fry...

Julianne the egg plant, set a side...
Lightly brown the ground pork with some garlic. Take out the pork, leave the drippings in the pan, add more chopped garlic, store fry on low to medium heat with the eggplant until soft, add soy, cooking wine to taste.

Add back the ground pork, add some cayenne pepper powder, a small amount of vinegar and a table spoon of sugar, then stir fry until the flavors, the ground pork, the egg plant are mixed together. If the sauce is too runny add light amount of starch. Then drizzle sesame oil and mix in green onions, chopped, then plate.

Frog would make you say yum. Especially the way he recommends. I tried the recipe he posted on here about frog legs for me and all I can say is WOW. Delicious. Makes me think twice about all of the odd dishes he posts lol
