Very cool set-up! Since you've decided to go betta maybe you could also add a myriad of freshwater inverts, maybe go micro-crab and rabbit snails. I'm no invert expert so I don't know how well they'd work with a betta but I think it'd make a great display. Either way good luck and keep us updated as your micro tank evolves!
 
I've heard of people putting plants especially ludwigia in for there bettas to eat while there gone.

I've always been under the impression that bettas are mainly carnivores (with a few shelled peas for constipation as the exception) and will only turn to eating plants out of desperation. Mine has never even looked at any plants in his tank.
 
A school of pygmy cories moving around the bottom and african butterfly fish floating above and you will have a jurassic park!

micro crabs will make the betta look like a female.
